Sloe Gin- what is it? (scroll down to view recipes)
Sloe Gin is a mixture of Sloe Berries, wild European plums (sloes) which have been collected from from the blackthorn bush. Traditionally the sloes are pricked by the thorns that they grow with and then mixed with sugar and gin to produce a very sweet liqueur. The mixture of berries, sugar and gin needs to be left for quite a long period of time to fuse together, usually about a year. Unlike the typically clear Gin, Sloe Gin is deep red in colour from all the berries and makes a lovely rich liqueur.
There are a number of variations as to how you can do this. Here are just two:
~~Recipe One~~
16 ounces (450g) sloes
1 bottle (700ml) gin
9 ounces (250g) sugar
1 teaspoon (15 ml) glycerine
Rinse the sloes and prick each one a dozen or so times. (alternatively freeze for 2 weeks then defrost) Place all the ingredients in a suitable container and shake at regular intervals for a period of 6 to 8 weeks. When the liqueur has acheived a deep red colour remove the sloes and allow
to mellow for a further month. As an alternative to sloes you can also use damsons.
~~Recipe Two~~
1 lb ripe sloes
1 pint gin
2 oz sugar
Prick each sloe with a needle (or, more traditionally, with a thorn). Put them into a large glass jar and sprinkle on the sugar.
Pour on the gin, close the jar and leave it to stand in a cool dry place for 3 months.

Cocktail with the cherries

To enjoy Nembs using your shot glass pour a small amount of the cognac syrup into the glass, position your indulgent cognac soaked cherries on the top using cocktail sticks them carefully pour over the cherries about an inch of Nembs. The two mixtures should seperate showing a layered affect, then ENJOY!

Hot Chillie Oils

One of the great ideas on how to reuse your Nembs bottle.

Once you have washed the bottle, chopp up about seven chillies of your choice and push into the Nembs botle, using the iol of your choice be it sunflower, veg, olive ect, pour about 300ml into the bottle and cork. Leave for three weeks then taste and enjoy your very own chillie oil to use in your stir fry, vinigerettes and general cooking.

Tyme and Rosemary oil

Flavoured oils

For a an aromaor of Tyme and Rosmary, chopp the herbs and push into your Nembs bottle.

Measure 300ml of the oil of your choice and pour into the bottle, cork using the Nembs sinthetic cork and leave for three weeks to fuse.

There you have it your very own flavoured oil.
